Several uses of brilliant blue are shown in Table 5.7. In fermented milks, it has been approved up to 150 mg/kg. Moreover, it can only be used on cheese surfaces under GMP. The maximum level in baked goods is 100 mg/kg.24 FDA approval for brilliant blue extends to its use in foods in general.6

Fast green was approved as food colorant in 1982.6 Fast green synthesis is similar to that of brilliant blue but benzaldehyde-p-hydroxy-o-sulfonic acid is used instead of benzaldehyde-o-sulfonic acid.10
