Oregano goes well with cabbage, kale, chard, tomatoes, mushrooms, zucchini (courgettes), broccoli, beans, tomato, pepper, onions, aubergine, and also with potatoes.
Pies and casserols made from vegetables get more flavor when seasoned with oregano or marjoram, and they are popular ingredients in low-calorie vegetarian dishes. Marjoram gives more aroma to such vegetable dishes like pea soup and other pea dishes, squash and stews made from mixed vegetables, mushrooms and asparagus. Oregano is a good substitute for table salt, and those who want to decrease their intake of salt, are advised to season their food with oregano.
