As discussed above, the major part of human dietary intake comprises water, proteins, carbohydrates, fats, and electrolytes. However, for the utilization of these nutrients it is essential to absorb other substances, called micronutrients, in relatively small and in some instances minute amounts. Trace elements are inorganic elements, whereas vitamins are complex organic compounds. Both are essential because they regulate metabolic processes as constituents of enzyme complexes required for the utilization of carbohydrates, proteins, and fats.
